Lemon and Coconut Bliss Balls
I absolutely love these lemon and coconut bliss balls. They taste fantastic, are really quick and simple to make and they only contain 6 ingredients. They are high in protein, fibre and good fats and so they make a great sweet treat that wont cause wild fluctuations in your blood sugar levels.
1 cup raw cashew nuts 1 cup dessicated coconut zest of 1-11/2 large lemon 1/4 tsp vanilla extract pinch of sea salt 2 tbsp maple syrup Extra dessicated coconut for rolling
Place the ingredients in your food processor and mix until the mixture is smooth and the nuts and coconut have broken downShape the mixture into ballsRoll in coconut and place in the fridge to firm upEat and enjoy!
