This salmon dish is simplicity at it's best. It is super easy to make - taking just 10 minutes to prep and then 20 minutes in the oven. Perfect for midweek tea
Ingredients
2 wild salmon fillets
4 tbsp olive oil
zest and juice of 1 lemon
small pack of mint leaves, finely chopped
vegetables of your choice ( used broccoli, green beans and cherry tomatoes)
Method
Preheat the oven to 180°C
Dressing: Whizz up 3 tbsp olive oil, lemon zest, lemon juice and mint (by hand or blender).
Place one salmon fillet per person into a deep sided baking tray.
Chop all of the vegetables to bite size pieces and add to the tray. Drizzle with the remaining olive oil.
Cover the salmon fillets with the dressing and put any excess to one side
Pop in the oven for 15-20 mins until the salmon is cooked.
Serve with the remaining dressing drizzled over, masses of veggies and a slice of lemon on the side.
