Zesty Spring Salmon (Serves 2)

This Zesty Salmon Traybake is simplicity at its best. It takes just 10 minutes to prepare and about 20 minutes in the oven, which makes it perfect for a midweek supper.

It’s also a really nourishing choice for midlife women. Salmon provides high quality protein to support muscle maintenance and steady energy levels, along with omega-3 fats which help to support heart health, brain function and reduce inflammation. Pairing it with plenty of colourful vegetables adds fibre and plant variety which helps support digestion and balanced blood sugar.


Fish with herbs, broccoli, beans, and cherry tomatoes


Ingredients

  • 2 wild salmon fillets

  • 4 tbsp olive oil

  • zest and juice of 1 lemon

  • small pack of mint leaves, finely chopped

  • vegetables of your choice ( used broccoli, green beans and cherry tomatoes)


Method

  1. Preheat the oven to 180°C

  2. Dressing: Whizz together 3 tbsp olive oil, lemon zest, lemon juice and mint (by hand or blender).

  3. Place one salmon fillet per person into a deep sided baking tray.

  4. Chop all of the vegetables to bite size pieces and add to the tray. Drizzle with the remaining olive oil.

  5. Cover the salmon fillets with the dressing and put any excess to one side

  6. Pop in the oven for 15-20 mins until the salmon is cooked.

  7. Serve with the remaining dressing drizzled over, with plenty of veggies and a slice of lemon on the side.
