Banana Pancakes (Makes 1 portion)

Probably the most popular not only with my clients but also with their family and friends!

I usually serve these with a handful of berries and a tablespoon or two of full fat greek yogurt. Delicious!


Ingredients

1/2 a banana (I freeze the rest for use in smoothies!)

1 medium egg

1 dessert spoon of oats

1 tsp vanilla extract (optional)

2 chopped walnuts (optional)

coconut oil, for frying


  1. Mash the banana and then mix the eggs, oats, vanilla and walnuts (if using) in thoroughly. I like to blend this in a high speed blender like a nutribullet for ease.

  2. To cook the pancakes melt a little coconut oil in a hot frying pan and fry on each side for about 60 seconds.

  3. Each pancake should be approx. 8-10cm diameter – one portion will make 2-3 pancakes.
