Spicy Lentil Soup (Serves 4)

I love this recipe because it is super simple to make... you literally just a bit of chop the veg and then put everything (except the yogurt and coriander) in the pot and you are good to go. Its chunky and filling and makes a great lunch or dinner option. Such a great option when you are busy.

It is a slow cooker recipe but you could put it in a casserole and cook it slowly in the oven at a low temperature (around 120 C for around 5 hours).


Spicy Lentil Soup

100g dried red lentils

1 litre of vegetable stock

400g canned chopped tomatoes

2 dried bay leaves

3 cloves of garlic, crushed

100g Mild Indian Curry Paste

2 small carrots chopped coarsely

1 stalk celery, sliced thinly

2 medium sweet potatoes, chopped coarsely (400g approx.)

140g Greek sytle yogurt

Handul of chopped coriander

Method

Rinse the lentils under cold water until the water runs clear, drain.

Combine lentils, stock, undrained tomatoes, bay leaf. Garlic, paste, carrot, celery and sweet potato in a slow cooker. Cook on low for 6 hours. Season and serve with yogurt and chopped coriander.
