Golden Sunshine Eggs (Serves 2)

This recipe works beautifully in midlife because it combines protein, fibre and healthy fats to support steady blood sugar and sustained energy. Eggs help maintain muscle and metabolism, courgette and garlic support digestion and natural detoxification, turmeric offers gentle anti-inflammatory support, and avocado keeps you satisfied. Simple ingredients, quietly supporting your changing body.


Easy, fresh summer skewers with watermelon, feta & mint or tomato, mozzarella & basil. Perfect for BBQs or picnics – simple, delicious and nourishing.

Ingredients

  • 1 medium courgette

  • 2 cloves garlic

  • ½ lemon

  • Handful fresh coriander

  • 6 large eggs

  • Salt and black pepper

  • 1 teaspoon turmeric

  • Olive oil

  • 1 avocado


Method

  1. Grate the courgette and finely chop the garlic. Place both into a large mixing bowl.

  2. Juice the lemon and add to the bowl. Wash and chop the fresh coriander and add this too. Mix well.

  3. In a separate bowl, whisk together the eggs, salt, pepper and turmeric. Pour the egg mixture into the courgette mixture and combine thoroughly.

  4. Add enough olive oil to cover the base of a frying pan and warm over a medium heat.

  5. Pour in the egg mixture and cook for 4–5 minutes, stirring regularly to create a soft scrambled egg texture.

  6. Serve with ½ avocado per person and sprinkle with a little extra coriander.
