Slow Cooker Beef Casserole (Serves 4)

This delicious slow cooker beef casserole is a fantastic option for Bonfire Night, providing warming comfort while supporting our immune health. Rich in protein, zinc, and iron, the beef helps bolster our immunity, and the carrots and celery add beneficial fibre and antioxidants.

Ingredients

  • 2 celery sticks, thickly sliced

  • 1 onion , chopped

  • 1 large carrot , halved lengthways and sliced

  • 3 bay leaves

  • 2 sprigs thyme

  • 1tbsp butter

  • 1tbsp cornflour

  • 2 tbsp tomato purée

  • 2 tbsp Worcestershire sauce

  • 1 beef stock cube, crumbled

  • 450g stewing beef, cut into chunks

  • 500ml hot water

Serve with a baked sweet potato and steamed green veggies


Method

  1. Heat butter in large frying pan and add the beef to brown the meat.

  2. Add to the slow cooker, along with celery, onion, carrots, bay leaf and thyme.

  3. Stir in the flour until mixed in.  Then add the tomato purée, Worcestershire sauce and stock cube.

  4. Gradually stir in 500ml hot water.

  5. Cook on low power for at least 6 hours, or on high for 4 hours.

  6. Serve with a small baked sweet potato and a pile of steamed green veggies.
